- 1 lb ground turkey
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 red bell pepper, diced
- 1 yellow onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh cilantro
- 1 lime, juiced
- 1/2 cup shredded cheddar cheese
Instructions
- Preheat oven to 375°F.
- Cook quinoa according to package instructions.
- In a large skillet, cook ground turkey over medium heat until browned and cooked through.
- Add diced bell pepper, onion, and garlic to the skillet and cook until vegetables are tender.
- Add cooked quinoa, black beans, cumin, chili powder, salt, and black pepper to the skillet and stir to combine.
- Remove skillet from heat and stir in chopped cilantro and lime juice.
- Transfer mixture to a 9x13 inch baking dish and top with shredded cheddar cheese.
