Ingredients
- 1 cup red lentils
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 teaspoon cumin
- 1 teaspoon coriander
- 1/2 teaspoon turmeric
- 1/4 teaspoon cayenne pepper
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 cup frozen peas
- 1/4 cup cilantro, chopped
- Salt and pepper, to taste
Instructions
- Rinse the lentils and pick out any debris.
- In a large pot, sauté the onion, garlic, and ginger until softened.
- Add the cumin, coriander, turmeric, and cayenne pepper and cook for another minute.
- Add the lentils, diced tomatoes, and vegetable broth and bring to a boil.
- Reduce heat and simmer for 20-25 minutes, or until the lentils are tender.
- Add the frozen peas and cook for another 5 minutes.
- Stir in the cilantro and season with salt and pepper to taste.
- Serve hot with rice or naan bread.
