Ingredients

  • 1 cup red lentils
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon cayenne pepper
  • 1 can diced tomatoes
  • 2 cups vegetable broth
  • 1 cup frozen peas
  • 1/4 cup cilantro, chopped
  • Salt and pepper, to taste

Instructions

  • Rinse the lentils and pick out any debris.
  • In a large pot, sauté the onion, garlic, and ginger until softened.
  • Add the cumin, coriander, turmeric, and cayenne pepper and cook for another minute.
  • Add the lentils, diced tomatoes, and vegetable broth and bring to a boil.
