Ingredients
- 1 lb. ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 cup quinoa
- 2 cups chicken broth
- 1 tsp. cumin
- 1 tsp. chili powder
- Salt and pepper to taste
- 1/4 cup chopped fresh cilantro
Instructions
- In a large skillet, cook the ground turkey over medium heat until browned.
- Add the onion, garlic, and red bell pepper and cook until softened.
- Add the black beans, diced tomatoes, quinoa, chicken broth, cumin, chili powder, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the quinoa is cooked and the liquid is absorbed.
- Stir in the chopped cilantro and serve hot.
