Ingredients

  • 1 lb. ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 can black beans, drained and rinsed
  • 1 can diced tomatoes
  • 1 cup quinoa
  • 2 cups chicken broth
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large skillet, cook the ground turkey over medium heat until browned.
  • Add the onion, garlic, and red bell pepper and cook until softened.
  • Add the black beans, diced tomatoes, quinoa, chicken broth, cumin, chili powder, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 20-25 minutes, or until the quinoa is cooked and the liquid is absorbed.
  • Stir in the chopped cilantro and serve hot.
