Ingredients

  • 1 lb. chicken breast
  • 1 cup quinoa
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 1 onion
  • 2 cloves garlic
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp cumin
  • 1/4 tsp cayenne pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  • Preheat oven to 375°F.
  • Cook quinoa according to package instructions.
  • Cut chicken into bite-sized pieces and season with salt, black pepper, paprika, cumin, and cayenne pepper.
  • Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5 minutes.
  • Add chopped onion and garlic to the skillet and cook until softened, about 3 minutes.
  • Add chopped bell peppers to the skillet and cook for an additional 5 minutes.
  • Transfer chicken and vegetable mixture to a baking dish. Add cooked quinoa and mix well.
  • Bake in preheated oven for 20 minutes.
  • Garnish with chopped cilantro before serving.
