Ingredients
- 1 lb. chicken breast
- 1 cup quinoa
- 1 red bell pepper
- 1 yellow bell pepper
- 1 onion
- 2 cloves garlic
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp cumin
- 1/4 tsp cayenne pepper
- 1/4 cup chopped fresh cilantro
Instructions
- Preheat oven to 375°F.
- Cook quinoa according to package instructions.
- Cut chicken into bite-sized pieces and season with salt, black pepper, paprika, cumin, and cayenne pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned on all sides, about 5 minutes.
- Add chopped onion and garlic to the skillet and cook until softened, about 3 minutes.
- Add chopped bell peppers to the skillet and cook for an additional 5 minutes.
- Transfer chicken and vegetable mixture to a baking dish. Add cooked quinoa and mix well.
- Bake in preheated oven for 20 minutes.
- Garnish with chopped cilantro before serving.
