Ingredients
- 1 lb lean ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 1 can (6 oz) tomato paste
- 1 tsp dried basil
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 12 whole wheat lasagne noodles
- 2 cups low-fat cottage cheese
- 1/2 cup grated Parmesan cheese
- 2 cups shredded low-fat mozzarella cheese
Instructions
- Preheat oven to 375°F.
- In a large skillet, cook ground turkey, onion, and garlic over medium heat until turkey is no longer pink.
- Add crushed tomatoes, tomato paste, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
- Meanwhile, cook lasagne noodles according to package directions. Drain and rinse with cold water.
- In a medium bowl, combine cottage cheese and Parmesan cheese.
- Spread 1 cup of the turkey mixture in the bottom of a 9x13 inch baking dish. Top with 4 lasagne noodles, 1/3 of the cottage cheese mixture, and 1/3 of the mozzarella cheese.
- Repeat layers twice, ending with the remaining turkey mixture and mozzarella cheese.
- Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 25 minutes, or until cheese is melted and bubbly.
- Let stand for 10 minutes before serving.
