Ingredients

  • 1 lb lean ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 1 can (6 oz) tomato paste
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 12 whole wheat lasagne noodles
  • 2 cups low-fat cottage cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded low-fat mozzarella cheese

Instructions

  • Preheat oven to 375°F.
  • In a large skillet, cook ground turkey, onion, and garlic over medium heat until turkey is no longer pink.
  • Add crushed tomatoes, tomato paste, basil, oregano, salt, and pepper. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Meanwhile, cook lasagne noodles according to package directions. Drain and rinse with cold water.
  • In a medium bowl, combine cottage cheese and Parmesan cheese.
  • Spread 1 cup of the turkey mixture in the bottom of a 9x13 inch baking dish. Top with 4 lasagne noodles, 1/3 of the cottage cheese mixture, and 1/3 of the mozzarella cheese.
  • Repeat layers twice, ending with the remaining turkey mixture and mozzarella cheese.
  • Cover with foil and bake for 25 minutes. Remove foil and bake for an additional 25 minutes, or until cheese is melted and bubbly.
  • Let stand for 10 minutes before serving.
