Ingredients
- 2 pounds chicken breast
- 1 cup quinoa
- 1 can black beans, drained and rinsed
- 1 cup corn kernels
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cups chicken broth
- 1/4 cup chopped fresh cilantro
- Juice of 1 lime
Instructions
- Place chicken breast in the crockpot.
- Add quinoa, black beans, corn, bell pepper, onion, garlic, chili powder, cumin, paprika, salt, and black pepper.
- Pour chicken broth over the ingredients.
- Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and quinoa is tender.
- Remove chicken from the crockpot and shred using two forks.
- Return shredded chicken to the crockpot and stir in cilantro and lime juice.
- Serve hot and enjoy!
