Ingredients

  • 2 pounds chicken breast
  • 1 cup quinoa
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 1/4 cup chopped fresh cilantro
  • Juice of 1 lime

Instructions

  • Place chicken breast in the crockpot.
  • Add quinoa, black beans, corn, bell pepper, onion, garlic, chili powder, cumin, paprika, salt, and black pepper.
  • Pour chicken broth over the ingredients.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is cooked through and quinoa is tender.
  • Remove chicken from the crockpot and shred using two forks.
  • Return shredded chicken to the crockpot and stir in cilantro and lime juice.
  • Serve hot and enjoy!
