Ingredients

  • 1 lb ground turkey
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (8 oz) tomato sauce
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chopped fresh cilantro

Instructions

  • In a large pot or Dutch oven, cook the ground turkey over medium heat until browned, breaking it up with a wooden spoon as it cooks.
  • Add the onion, bell pepper, and garlic to the pot and cook until the vegetables are tender, about 5 minutes.
  • Add the diced tomatoes (with their juice), kidney beans, black beans, corn, tomato sauce, chili powder, cumin, paprika, salt, and black pepper to the pot. Stir well to combine.
  • Bring the chili to a simmer and let it cook for 20-30 minutes, stirring occasionally, until the flavors have melded together and the chili has thickened slightly.
  • Stir in the chopped cilantro and serve hot, garnished with additional cilantro if desired.
