Ingredients
- 1 scoop vanilla protein powder
- 1/2 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsweetened applesauce
- 1/4 cup almond milk
- 1 egg
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup sugar-free jam
- 1/4 cup powdered sugar
- 1 tbsp sprinkles
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine protein powder, almond flour, coconut flour, baking powder, and salt.
- Add in applesauce, almond milk, egg, and vanilla extract. Mix until well combined.
- Roll out dough on a floured surface and cut into rectangles.
- Place rectangles on a baking sheet lined with parchment paper.
- Spoon jam onto half of the rectangles, leaving a small border around the edges.
- Top with remaining rectangles and press edges together with a fork.
- Bake for 12-15 minutes, or until golden brown.
- Mix powdered sugar with a small amount of water to make a glaze.
- Drizzle glaze over cooled poptarts and top with sprinkles.
- Serve and enjoy!
