Ingredients

  • 1 scoop vanilla protein powder
  • 1/2 cup almond flour
  • 1/4 cup coconut flour
  • 1/4 cup unsweetened applesauce
  • 1/4 cup almond milk
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup sugar-free jam
  • 1/4 cup powdered sugar
  • 1 tbsp sprinkles

Instructions

  • Preheat oven to 350°F.
  • In a mixing bowl, combine protein powder, almond flour, coconut flour, baking powder, and salt.
  • Add in applesauce, almond milk, egg, and vanilla extract. Mix until well combined.
  • Roll out dough on a floured surface and cut into rectangles.
  • Place rectangles on a baking sheet lined with parchment paper.
  • Spoon jam onto half of the rectangles, leaving a small border around the edges.
  • Top with remaining rectangles and press edges together with a fork.
  • Bake for 12-15 minutes, or until golden brown.
  • Mix powdered sugar with a small amount of water to make a glaze.
  • Drizzle glaze over cooled poptarts and top with sprinkles.
  • Serve and enjoy!
