- 2 ripe bananas
- 1/2 cup protein powder
- 1 cup whole wheat flour
- 1/4 cup honey
- 1/4 cup almond milk
- 1/4 cup Greek yogurt
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/4 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mash the ripe bananas until smooth.
- Add the protein powder, whole wheat flour, honey, almond milk, Greek yogurt, baking powder, baking soda, cinnamon, and salt to the bowl. Stir until well combined.
- If desired, fold in the chopped walnuts.
- Divide the batter evenly among the muffin cups, filling each about 3/4 full.
- Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Allow the muffins to cool in the tin for 5 minutes, then transfer them to a wire rack to cool completely.
