Ingredients
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- 1 yellow bell pepper, chopped
- 1 zucchini, chopped
- 1 yellow squash, chopped
- 1 cup chopped mushrooms
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
Instructions
- Add onion and garlic to pressure cooker and sauté until softened.
- Add bell peppers, zucchini, yellow squash, and mushrooms and sauté for a few minutes.
- Add diced tomatoes, vegetable broth, basil, oregano, thyme, salt, and pepper.
- Lock the lid in place and bring to high pressure over high heat.
- Reduce heat to low and cook for 5 minutes.
- Release pressure and serve hot.
