Ingredients

  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow bell pepper, chopped
  • 1 zucchini, chopped
  • 1 yellow squash, chopped
  • 1 cup chopped mushrooms
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

  • Add onion and garlic to pressure cooker and sauté until softened.
  • Add bell peppers, zucchini, yellow squash, and mushrooms and sauté for a few minutes.
  • Add diced tomatoes, vegetable broth, basil, oregano, thyme, salt, and pepper.
  • Lock the lid in place and bring to high pressure over high heat.
  • Reduce heat to low and cook for 5 minutes.
  • Release pressure and serve hot.
