Nutrition Per Serving
- 1 cup quinoa
- 1 sweet potato, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 avocado, sliced
- 1/4 cup pumpkin seeds
- 1/4 cup sunflower seeds
- 1/4 cup dried cranberries
- 1/4 cup chopped fresh parsley
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- 1 teaspoon Dijon mustard
- Salt and pepper to taste
- Preheat oven to 400°F.
- Cook quinoa according to package instructions.
- Toss sweet potato and bell peppers with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until tender.
