Ingredients

  • 1 cup quinoa
  • 1 sweet potato, diced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 avocado, sliced
  • 1/4 cup pumpkin seeds
  • 1/4 cup sunflower seeds
  • 1/4 cup dried cranberries
  • 1/4 cup chopped fresh parsley
  • 1/4 cup olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste

Instructions

  • Preheat oven to 400°F.
  • Cook quinoa according to package instructions.
  • Toss sweet potato and bell peppers with olive oil, salt, and pepper. Roast in the oven for 20-25 minutes, or until tender.
