Ingredients

  • 1 lb. pork tenderloin, sliced into thin strips
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tbsp. olive oil
  • 8-10 small corn tortillas
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup crumbled queso fresco
  • 1/4 cup sour cream
  • 1 tbsp. lime juice
  • 1/4 tsp. salt

Instructions

  • Preheat oven to 375°F.
  • In a small bowl, mix together chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
  • In a large skillet, heat olive oil over medium-high heat. Add pork and spice mixture to skillet and cook until pork is browned and cooked through, about 5-7 minutes.
  • While pork is cooking, warm tortillas in the oven for 5-7 minutes.
  • In a small bowl, mix together sour cream, lime juice, and salt to make lime crema.
  • To assemble tacos, place a few strips of pork on each tortilla. Top with diced tomatoes, red onion, cilantro, queso fresco, and a dollop of lime crema.
  • Serve immediately and enjoy!
