These pork fiesta tacos are bursting with flavor and perfect for any fiesta or gathering. The tender pork is seasoned with a blend of spices and served with fresh toppings and a zesty lime crema.

Ingredients
- 1 lb. pork tenderloin, sliced into thin strips
- 1 tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1/2 tsp. smoked paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tbsp. olive oil
- 8-10 small corn tortillas
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/2 cup chopped fresh cilantro
- 1/2 cup crumbled queso fresco
- 1/4 cup sour cream
- 1 tbsp. lime juice
- 1/4 tsp. salt
Instructions
- Preheat oven to 375°F.
- In a small bowl, mix together chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper.
- In a large skillet, heat olive oil over medium-high heat. Add pork and spice mixture to skillet and cook until pork is browned and cooked through, about 5-7 minutes.
- While pork is cooking, warm tortillas in the oven for 5-7 minutes.
- In a small bowl, mix together sour cream, lime juice, and salt to make lime crema.
- To assemble tacos, place a few strips of pork on each tortilla. Top with diced tomatoes, red onion, cilantro, queso fresco, and a dollop of lime crema.
- Serve immediately and enjoy!
