Ingredients
- 4 large potatoes
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of grated cheese
- 1/2 cup of sour cream
- 1/4 cup of chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and slice the potatoes into thin rounds.
- In a large skillet, heat some oil over medium heat and sauté the diced onion and minced garlic until they become translucent.
- Layer half of the sliced potatoes in a greased baking dish.
- Spread half of the sautéed onion and garlic mixture over the potatoes.
- Sprinkle half of the grated cheese and chopped parsley over the onion and garlic mixture.
- Repeat the layers with the remaining potatoes, onion and garlic mixture, cheese, and parsley.
- Season with salt and pepper to taste.
- Cover the baking dish with foil and bake for 45 minutes.
- Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
- Serve hot, garnished with additional parsley if desired.
