Ingredients

  • 4 large potatoes
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 cup of grated cheese
  • 1/2 cup of sour cream
  • 1/4 cup of chopped fresh parsley
  • Salt and pepper to taste

Instructions

  • Preheat the oven to 375°F (190°C).
  • Peel and slice the potatoes into thin rounds.
  • In a large skillet, heat some oil over medium heat and sauté the diced onion and minced garlic until they become translucent.
  • Layer half of the sliced potatoes in a greased baking dish.
  • Spread half of the sautéed onion and garlic mixture over the potatoes.
  • Sprinkle half of the grated cheese and chopped parsley over the onion and garlic mixture.
  • Repeat the layers with the remaining potatoes, onion and garlic mixture, cheese, and parsley.
  • Season with salt and pepper to taste.
  • Cover the baking dish with foil and bake for 45 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until the potatoes are tender and the cheese is golden and bubbly.
  • Serve hot, garnished with additional parsley if desired.
