Ingredients

  • 2 cups poha (flattened rice)
  • 1 medium onion, finely chopped
  • 1 medium potato, boiled and diced
  • 1/2 cup green peas
  • 2 green chilies, finely chopped
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 1/8 teaspoon asafoetida (hing)
  • A handful of curry leaves
  • Salt to taste
  • 2 tablespoons oil
  • Fresh coriander leaves for garnish
  • Juice of 1/2 lemon
  • 2 tablespoons roasted peanuts (optional)

    Place the poha in a sieve and rinse under running water until clean. Let it sit for 10 minutes to soften.

    Heat oil in a large pan over medium heat. Add mustard seeds and cumin seeds; let them splutter.

    Add chopped onions, green chilies, and curry leaves. Sauté until onions are translucent.

    Add the rinsed poha, lemon juice, and gently combine with other ingredients. Cover and cook for 5 minutes on low heat.
