Ingredients
- 1 cup pineapple chunks
- 1 cup coconut milk
- 1/4 cup white rum (optional)
- 2 tablespoons honey
- 1/2 cup shredded coconut
Instructions
- In a blender, combine pineapple chunks, coconut milk, rum (if using), and honey. Blend until smooth.
- Pour the mixture into ice lolly molds, leaving a little space at the top for expansion.
- Sprinkle shredded coconut on top of each ice lolly.
- Insert ice lolly sticks into the molds.
- Place the molds in the freezer and freeze for at least 4 hours or until solid.
- To remove the ice lollies from the molds, run them under warm water for a few seconds.
- Serve and enjoy!
