Ingredients

  • 1 cup pineapple chunks
  • 1 cup coconut milk
  • 1/4 cup white rum (optional)
  • 2 tablespoons honey
  • 1/2 cup shredded coconut

Instructions

  • In a blender, combine pineapple chunks, coconut milk, rum (if using), and honey. Blend until smooth.
  • Pour the mixture into ice lolly molds, leaving a little space at the top for expansion.
  • Sprinkle shredded coconut on top of each ice lolly.
  • Insert ice lolly sticks into the molds.
  • Place the molds in the freezer and freeze for at least 4 hours or until solid.
  • To remove the ice lollies from the molds, run them under warm water for a few seconds.
  • Serve and enjoy!
