Ingredients
- 2 pounds pike fillets
- 1 onion, chopped
- 2 carrots, sliced
- 2 celery stalks, diced
- 3 potatoes, peeled and cubed
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 4 cups fish or vegetable broth
- 1 cup white wine
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- 1. In a large pot, heat some oil over medium heat. Add the chopped onion, sliced carrots, diced celery, and minced garlic. Cook until the vegetables are softened, about 5 minutes.
- 2. Add the pike fillets to the pot and cook for another 2 minutes, stirring gently to coat the fish with the vegetables.
- 3. Stir in the bay leaf, dried thyme, and paprika. Season with salt and pepper to taste.
- 4. Pour in the fish or vegetable broth and white wine. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 20 minutes, or until the pike is cooked through and the flavors have melded together.
- 5. Remove the bay leaf from the pot. Taste and adjust the seasoning if needed.
- 6. Serve the pike stew hot, garnished with fresh parsley. Enjoy!
