Ingredients
- 8 ounces of whole wheat pasta
- 2 cups of fresh basil leaves
- 1/2 cup of grated Parmesan cheese
- 1/4 cup of pine nuts
- 2 cloves of garlic
- 1/2 cup of olive oil
- 1 cup of cherry tomatoes, halved
- 1 cup of cooked chicken breast, diced
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
- With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
- In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.
- Add the cooked chicken breast to the skillet and cook for an additional 2-3 minutes, or until heated through.
- Add the cooked pasta to the skillet and toss to combine.
- Pour the pesto sauce over the pasta and toss until well coated.
- Season with salt and pepper to taste.
- Serve hot and enjoy!
