Ingredients

  • 8 ounces of whole wheat pasta
  • 2 cups of fresh basil leaves
  • 1/2 cup of grated Parmesan cheese
  • 1/4 cup of pine nuts
  • 2 cloves of garlic
  • 1/2 cup of olive oil
  • 1 cup of cherry tomatoes, halved
  • 1 cup of cooked chicken breast, diced
  • Salt and pepper to taste

Instructions

  • Cook the pasta according to package instructions. Drain and set aside.
  • In a food processor, combine the basil, Parmesan cheese, pine nuts, and garlic. Pulse until finely chopped.
  • With the food processor running, slowly drizzle in the olive oil until the mixture is smooth and well combined.
  • In a large skillet, heat a tablespoon of olive oil over medium heat. Add the cherry tomatoes and cook until they start to soften, about 2-3 minutes.
  • Add the cooked chicken breast to the skillet and cook for an additional 2-3 minutes, or until heated through.
  • Add the cooked pasta to the skillet and toss to combine.
  • Pour the pesto sauce over the pasta and toss until well coated.
  • Season with salt and pepper to taste.
  • Serve hot and enjoy!
