Ingredients
- 2 cups fresh basil leaves
- 1/2 cup grated Parmesan cheese
- 1/2 cup extra-virgin olive oil
- 3 cloves garlic
- 1/4 cup pine nuts
- Salt and pepper to taste
- 8 ounces pasta
- 1 cup cherry tomatoes, halved
- 1 cup cooked chicken, diced
- 1/2 cup mozzarella cheese, shredded
Instructions
- In a food processor, combine the basil, Parmesan cheese, olive oil, garlic, pine nuts, salt, and pepper. Process until smooth.
- Cook the pasta according to package instructions. Drain and set aside.
- In a large skillet, heat some olive oil over medium heat. Add the cherry tomatoes and cook until they start to soften.
- Add the cooked chicken to the skillet and cook until heated through.
- Add the pesto sauce to the skillet and stir to combine with the chicken and tomatoes.
- Add the cooked pasta to the skillet and toss to coat with the sauce.
- Sprinkle the mozzarella cheese over the top and cover the skillet. Cook for a few minutes until the cheese is melted.
- Serve hot and enjoy!
