Ingredients
- 1 cup quinoa
- 2 cups water
- 1/2 cup chopped onion
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped yellow bell pepper
- 1/2 cup chopped pequi fruit
- 1/4 cup chopped fresh cilantro
- 2 tablespoons olive oil
- 1 tablespoon red wine vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Rinse quinoa in a fine mesh strainer and drain well.
- In a medium saucepan, bring water to a boil.
- Add quinoa and return to a boil.
- Reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed and quinoa is tender.
- Remove from heat and let stand for 5 minutes.
- Fluff with a fork.
- In a large bowl, combine cooked quinoa, onion, bell peppers, pequi fruit, and cilantro.
- In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
- Pour dressing over quinoa mixture and toss to coat.
- Serve warm or chilled.
