Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 1/2 cup chopped onion
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped yellow bell pepper
  • 1/2 cup chopped pequi fruit
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions

  • Rinse quinoa in a fine mesh strainer and drain well.
  • In a medium saucepan, bring water to a boil.
  • Add quinoa and return to a boil.
  • Reduce heat to low, cover, and simmer for 15-20 minutes or until water is absorbed and quinoa is tender.
  • Remove from heat and let stand for 5 minutes.
  • Fluff with a fork.
  • In a large bowl, combine cooked quinoa, onion, bell peppers, pequi fruit, and cilantro.
  • In a small bowl, whisk together olive oil, red wine vinegar, salt, and black pepper.
  • Pour dressing over quinoa mixture and toss to coat.
  • Serve warm or chilled.
