Ingredients

  • 1 cup fresh or frozen peas
  • 1 cup carrots, diced
  • 2 cups macaroni

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon onion powder
  • Salt and freshly ground black pepper, to taste

Directions

  1. 1

Bring a large pot of salted water to a boil and cook macaroni according to package instructions until al dente. Drain and set aside.

  2. 2

In a large skillet, heat olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.

  3. 3

Add the diced carrots and cook for 4-5 minutes until they begin to soften.

  4. 4

Stir in the peas and shredded cabbage, sprinkling with onion powder, salt, and pepper. Cook for another 5 minutes, stirring occasionally.

  5. 5

Toss the cooked macaroni into the skillet, mixing well with the vegetables.

  6. 6

Continue to cook for another 2-3 minutes until everything is heated through.

  7. 7

Adjust seasoning if necessary, then serve hot and enjoy!
