Ingredients

  • 8 ounces whole grain pasta
  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 ounces) diced tomatoes, no salt added
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Directions

    Cook the pasta in well-salted water according to package instructions until al dente. Reserve 1/4 cup of pasta water, then drain and set aside.

    While the pasta cooks, heat olive oil in a large skillet over medium-high heat. Season chicken with salt and pepper, then cook until browned and cooked through, about 6-8 minutes per side. Transfer to a plate and tent with foil.

    In the same skillet, sauté onion until translucent, about 5 minutes. Add garlic and cook for another 30 seconds until fragrant.
