Ingredients
- 1 pound whole wheat pasta
- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can diced tomatoes
- 1 cup low-fat cottage cheese
- 1/2 cup grated Parmesan cheese
- 1/2 cup chopped fresh parsley
- Salt and pepper to taste
Instructions
- Preheat oven to 375 degrees F.
- Cook pasta according to package directions.
- Meanwhile, in a large skillet, cook turkey, onion, and garlic over medium heat until turkey is no longer pink.
- Stir in tomatoes and bring to a boil.
- Reduce heat and simmer for 10 minutes.
- In a large bowl, combine cooked pasta, turkey mixture, cottage cheese, Parmesan cheese, parsley, salt, and pepper.
- Transfer to a 9x13 inch baking dish.
- Bake for 25-30 minutes, or until heated through and bubbly.
