Ingredients
- 1 pound pasta
- 1/2 cup mayonnaise
- 1/4 cup red wine vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup chopped red onion
- 1/2 cup chopped celery
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green bell pepper
- 1/2 cup chopped cucumber
- 1/2 cup chopped carrot
- 1/4 cup chopped fresh parsley
Instructions
- Cook pasta according to package directions. Drain and rinse with cold water.
- In a large bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, sugar, salt, and black pepper.
- Add cooked pasta, red onion, celery, red bell pepper, green bell pepper, cucumber, carrot, and parsley to the bowl. Toss to combine.
- Refrigerate for at least 1 hour before serving.
