Ingredients

  • 1 pound pasta
  • 1/2 cup mayonnaise
  • 1/4 cup red wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped cucumber
  • 1/2 cup chopped carrot
  • 1/4 cup chopped fresh parsley

Instructions

  • Cook pasta according to package directions. Drain and rinse with cold water.
  • In a large bowl, whisk together mayonnaise, red wine vinegar, Dijon mustard, sugar, salt, and black pepper.
  • Add cooked pasta, red onion, celery, red bell pepper, green bell pepper, cucumber, carrot, and parsley to the bowl. Toss to combine.
  • Refrigerate for at least 1 hour before serving.
