- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1 egg
- 2 tablespoons vegetable oil
- 1 pound ground beef
- 1 packet taco seasoning
- 1/2 cup water
- 1 cup shredded cheddar cheese
- 1/2 cup diced tomatoes
- 1/4 cup diced red onion
- 1/4 cup chopped fresh cilantro
- Sour cream and hot sauce, for serving
Instructions
- In a large bowl, whisk together the flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, egg, and vegetable oil.
- Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a nonstick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, then flip and cook until golden brown. Repeat with remaining batter.
- In a large skillet, cook the ground beef over medium-high heat until browned and cooked through. Drain any excess fat.
- Add the taco seasoning and water to the skillet with the beef. Stir to combine and simmer for 5 minutes.
- To assemble the pancake tacos, place a pancake on a plate. Top with a spoonful of the beef mixture, shredded cheese, diced tomatoes, red onion, and cilantro. Fold the pancake in half like a taco. Repeat with remaining pancakes and toppings.
- Serve with sour cream and hot sauce, if desired.
