Ingredients
- 2 boneless, skinless chicken breasts
- 1 cup cauliflower rice
- 1/2 cup diced bell peppers
- 1/2 cup diced onions
- 2 cloves garlic, minced
- 1 tablespoon coconut oil
- 1 teaspoon paprika
- 1/2 teaspoon cumin
- Salt and pepper to taste
Instructions
- 1. Heat coconut oil in a large skillet over medium heat.
- 2. Season chicken breasts with paprika, cumin, salt, and pepper.
- 3. Cook chicken breasts in the skillet for 6-8 minutes per side, or until cooked through.
- 4. Remove chicken from skillet and set aside.
- 5. In the same skillet, add onions, bell peppers, and garlic. Cook until vegetables are tender.
- 6. Add cauliflower rice to the skillet and cook for an additional 3-4 minutes.
- 7. Slice cooked chicken breasts and add them back to the skillet.
- 8. Stir everything together and cook for another 2-3 minutes.
