Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 cup cauliflower rice
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1 tablespoon coconut oil
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

Instructions

  • 1. Heat coconut oil in a large skillet over medium heat.
  • 2. Season chicken breasts with paprika, cumin, salt, and pepper.
  • 3. Cook chicken breasts in the skillet for 6-8 minutes per side, or until cooked through.
  • 4. Remove chicken from skillet and set aside.
  • 5. In the same skillet, add onions, bell peppers, and garlic. Cook until vegetables are tender.
  • 6. Add cauliflower rice to the skillet and cook for an additional 3-4 minutes.
  • 7. Slice cooked chicken breasts and add them back to the skillet.
  • 8. Stir everything together and cook for another 2-3 minutes.
