Ingredients
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup coconut sugar
- 1/4 cup melted coconut oil
- 1/4 cup pure maple syrup
- 1 cup pumpkin puree
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- 1/4 teaspoon sea salt
- 1/2 cup chopped pecans
- 1/4 cup unsweetened shredded coconut
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large bowl, combine the almond flour, coconut flour, coconut sugar, melted coconut oil, and maple syrup. Mix well.
- Add the pumpkin puree, vanilla extract, cinnamon, nutmeg, ginger, and sea salt to the bowl. Stir until all the ingredients are well combined.
- Pour the mixture into the greased baking dish and spread it evenly.
- In a small bowl, mix together the chopped pecans and shredded coconut. Sprinkle the mixture over the pumpkin batter.
- Bake in the preheated oven for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out clean.
- Remove from the oven and let it cool before serving.
- Serve the paleo pumpkin delight as is or with a dollop of coconut whipped cream.
