Ingredients

  • 1 sweet potato, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup quinoa
  • 1 cup water
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 cups baby spinach

Instructions

  • Preheat oven to 400°F.
  • In a bowl, toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
  • In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until water is absorbed and quinoa is tender.
  • In a large bowl, combine roasted sweet potato, cooked quinoa, avocado, cherry tomatoes, red onion, cilantro, and lime juice. Toss to combine.
  • Divide baby spinach between two bowls. Top with sweet potato and quinoa mixture.
  • Serve and enjoy!
