Ingredients
- 1 sweet potato, peeled and cubed
- 1 tablespoon olive oil
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup quinoa
- 1 cup water
- 1 avocado, sliced
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 lime, juiced
- 2 cups baby spinach
Instructions
- Preheat oven to 400°F.
- In a bowl, toss sweet potato cubes with olive oil, paprika, garlic powder, salt, and black pepper. Spread on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
- In a small saucepan, combine quinoa and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until water is absorbed and quinoa is tender.
- In a large bowl, combine roasted sweet potato, cooked quinoa, avocado, cherry tomatoes, red onion, cilantro, and lime juice. Toss to combine.
- Divide baby spinach between two bowls. Top with sweet potato and quinoa mixture.
- Serve and enjoy!
