Ingredients

  • 1 medium sweet potato, peeled and cubed
  • 1 tablespoon olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup quinoa
  • 1 cup water
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped
  • 1 lime, juiced
  • 2 cups baby spinach

Directions

    Preheat oven to 400°F (200°C).

    Toss the cubed sweet potato with olive oil, paprika, garlic powder, salt, and black pepper. Spread evenly on a baking sheet.
