Ingredients
- 4 eggs
- 1 avocado
- 1/2 red onion
- 1/2 red bell pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1 tbsp olive oil
Instructions
- 1. Preheat oven to 350°F.
- 2. Cut the avocado in half and remove the pit.
- 3. Scoop out a little bit of the avocado flesh to make room for the egg.
- 4. Crack an egg into each avocado half.
- 5. Season with salt and black pepper.
- 6. Place the avocado halves on a baking sheet and bake for 15-20 minutes, or until the egg whites are set.
- 7. While the eggs are baking, chop the red onion and red bell pepper.
- 8. Heat the olive oil in a skillet over medium heat.
- 9. Add the chopped vegetables and sauté for 5-7 minutes, or until they are tender.
- 10. Serve the baked eggs with the sautéed vegetables on top.
- 11. Enjoy!
