Ingredients

  • 4 eggs
  • 1 avocado
  • 1/2 red onion
  • 1/2 red bell pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  • 1. Preheat oven to 350°F.
  • 2. Cut the avocado in half and remove the pit.
  • 3. Scoop out a little bit of the avocado flesh to make room for the egg.
  • 4. Crack an egg into each avocado half.
  • 5. Season with salt and black pepper.
  • 6. Place the avocado halves on a baking sheet and bake for 15-20 minutes, or until the egg whites are set.
  • 7. While the eggs are baking, chop the red onion and red bell pepper.
  • 8. Heat the olive oil in a skillet over medium heat.
  • 9. Add the chopped vegetables and sauté for 5-7 minutes, or until they are tender.
  • 10. Serve the baked eggs with the sautéed vegetables on top.
