Ingredients
- 2 chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup broccoli florets
- 1 cup cauliflower florets
- 1/2 cup sliced carrots
- 1/2 cup sliced bell peppers
- 1/4 cup chopped red onion
- 2 tablespoons coconut aminos
- 1 tablespoon apple cider vinegar
- 1 tablespoon honey
- 1 tablespoon arrowroot powder
- 1/4 cup water
Instructions
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together the garlic powder, paprika, salt, and black pepper.
- Rub the chicken breasts with olive oil and then sprinkle the spice mixture evenly over both sides of the chicken.
- Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
- While the chicken is baking, steam the broccoli, cauliflower, carrots, bell peppers, and red onion until tender.
- In a small saucepan, whisk together the coconut aminos, apple cider vinegar, honey, arrowroot powder, and water.
- Cook over medium heat until the sauce thickens, stirring constantly.
- Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
- Serve the sliced chicken over the steamed vegetables and drizzle the sauce on top.
