Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup broccoli florets
  • 1 cup cauliflower florets
  • 1/2 cup sliced carrots
  • 1/2 cup sliced bell peppers
  • 1/4 cup chopped red onion
  • 2 tablespoons coconut aminos
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon honey
  • 1 tablespoon arrowroot powder
  • 1/4 cup water

Instructions

  • Preheat the oven to 400°F (200°C).
  • In a small bowl, mix together the garlic powder, paprika, salt, and black pepper.
  • Rub the chicken breasts with olive oil and then sprinkle the spice mixture evenly over both sides of the chicken.
  • Place the chicken on a baking sheet and bake for 20-25 minutes, or until cooked through.
  • While the chicken is baking, steam the broccoli, cauliflower, carrots, bell peppers, and red onion until tender.
  • In a small saucepan, whisk together the coconut aminos, apple cider vinegar, honey, arrowroot powder, and water.
  • Cook over medium heat until the sauce thickens, stirring constantly.
  • Once the chicken is cooked, let it rest for a few minutes before slicing it into strips.
