Ingredients

  • 2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/2 tsp vanilla extract
  • 1/4 tsp sea salt
  • 2 cups cashews, soaked overnight
  • 1/2 cup coconut cream
  • 1/4 cup coconut oil, melted
  • 1/4 cup honey
  • 1/4 cup lemon juice
  • 1 tsp vanilla extract
  • 1/4 tsp sea salt

Instructions

  • Preheat oven to 350°F.
  • In a mixing bowl, combine almond flour, melted coconut oil, honey, vanilla extract, and sea salt. Mix well.
  • Press mixture into the bottom of a 9-inch springform pan.
  • Bake for 10-12 minutes, or until lightly golden brown. Remove from oven and let cool.
  • In a blender or food processor, combine soaked cashews, coconut cream, melted coconut oil, honey, lemon juice, vanilla extract, and sea salt. Blend until smooth and creamy.
  • Pour mixture over the cooled crust and smooth out the top with a spatula.
  • Refrigerate for at least 4 hours, or until set.
  • Serve chilled and enjoy!
