Ingredients
- 2 cups almond flour
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
- 2 cups cashews, soaked overnight
- 1/2 cup coconut cream
- 1/4 cup coconut oil, melted
- 1/4 cup honey
- 1/4 cup lemon juice
- 1 tsp vanilla extract
- 1/4 tsp sea salt
Instructions
- Preheat oven to 350°F.
- In a mixing bowl, combine almond flour, melted coconut oil, honey, vanilla extract, and sea salt. Mix well.
- Press mixture into the bottom of a 9-inch springform pan.
- Bake for 10-12 minutes, or until lightly golden brown. Remove from oven and let cool.
- In a blender or food processor, combine soaked cashews, coconut cream, melted coconut oil, honey, lemon juice, vanilla extract, and sea salt. Blend until smooth and creamy.
- Pour mixture over the cooled crust and smooth out the top with a spatula.
- Refrigerate for at least 4 hours, or until set.
- Serve chilled and enjoy!
