Ingredients
- 4 salmon fillets
- 1 lb brussels sprouts, trimmed and halved
- 1 head cauliflower, chopped
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried thyme
- 1 tsp dried rosemary
- Salt and pepper, to taste
Instructions
- Preheat the oven to 400°F.
- Place the salmon fillets on a baking sheet lined with parchment paper.
- In a small bowl, mix together the garlic powder, onion powder, thyme, rosemary, salt, and pepper.
- Rub the spice mixture onto the salmon fillets.
- Roast the salmon in the oven for 12-15 minutes, or until cooked through.
- While the salmon is cooking, toss the brussels sprouts with 1 tbsp of olive oil and spread them out on a separate baking sheet.
- Roast the brussels sprouts in the oven for 20-25 minutes, or until tender and lightly browned.
- Meanwhile, steam the chopped cauliflower until tender.
- Transfer the cauliflower to a food processor and add the remaining 1 tbsp of olive oil.
- Pulse until the cauliflower is smooth and creamy.
- Serve the salmon with the roasted brussels sprouts and cauliflower mash.
