Ingredients

  • 4 salmon fillets
  • 1 lb brussels sprouts, trimmed and halved
  • 1 head cauliflower, chopped
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste

Instructions

  • Preheat the oven to 400°F.
  • Place the salmon fillets on a baking sheet lined with parchment paper.
  • In a small bowl, mix together the garlic powder, onion powder, thyme, rosemary, salt, and pepper.
  • Rub the spice mixture onto the salmon fillets.
  • Roast the salmon in the oven for 12-15 minutes, or until cooked through.
  • While the salmon is cooking, toss the brussels sprouts with 1 tbsp of olive oil and spread them out on a separate baking sheet.
  • Roast the brussels sprouts in the oven for 20-25 minutes, or until tender and lightly browned.
  • Meanwhile, steam the chopped cauliflower until tender.
  • Transfer the cauliflower to a food processor and add the remaining 1 tbsp of olive oil.
  • Pulse until the cauliflower is smooth and creamy.
  • Serve the salmon with the roasted brussels sprouts and cauliflower mash.
