Ingredients
- 1 lb boneless, skinless chicken breasts, cut into cubes
- 2 cups fresh baby spinach
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup plain Greek yogurt
- 1 tbsp olive oil

Preheat the oven to 375°F (190°C).

In a bowl, combine cumin, coriander, turmeric, salt, and black pepper. Mix well.

Toss chicken cubes in the spice mix until well coated.

Heat olive oil in a skillet over medium-high heat. Sauté onion and garlic until soft, about 5 minutes.

Add the spiced chicken to the skillet, browning all sides for about 5 minutes.

Transfer chicken mixture to a baking dish. Wilt spinach in the same skillet for 2 minutes, then add to baking dish.

Top evenly with yogurt. Bake for 20-25 minutes until chicken is cooked through.
