Palaka Chicken Delight
A delicious and healthy chicken dish made with spinach and spices.
Nutrition Per Serving
- 1 lb boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp coriander
- 1 tsp turmeric
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup plain yogurt
- 1 tbsp olive oil
- Preheat oven to 375°F.
- In a large bowl, mix together the cumin, coriander, turmeric, salt, and black pepper.
- Add the chicken to the bowl and toss to coat with the spice mixture.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the onion and garlic and cook until softened, about 5 minutes.
- Add the chicken to the skillet and cook until browned on all sides, about 5 minutes.
- Transfer the chicken and onion mixture to a baking dish.
- Add the spinach to the skillet and cook until wilted, about 2 minutes.
- Spread the spinach over the chicken in the baking dish.
- Pour the yogurt over the top of the spinach.
- Bake for 20-25 minutes, or until the chicken is cooked through.
- Serve hot with rice or naan bread.
