Ingredients

  • 1 lb boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp turmeric
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup plain yogurt
  • 1 tbsp olive oil

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, mix together the cumin, coriander, turmeric, salt, and black pepper.
  • Add the chicken to the bowl and toss to coat with the spice mixture.
  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the onion and garlic and cook until softened, about 5 minutes.
  • Add the chicken to the skillet and cook until browned on all sides, about 5 minutes.
  • Transfer the chicken and onion mixture to a baking dish.
  • Add the spinach to the skillet and cook until wilted, about 2 minutes.
  • Spread the spinach over the chicken in the baking dish.
  • Pour the yogurt over the top of the spinach.
  • Bake for 20-25 minutes, or until the chicken is cooked through.
  • Serve hot with rice or naan bread.
