Ingredients

  • 1 cup bamboo rice
  • 2 cups water
  • 1/2 cup sliced carrots
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced red bell pepper
  • 1/2 cup sliced avocado
  • 1/2 cup cooked edamame
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 2 tablespoons sesame seeds
  • 1/4 cup soy sauce (low sodium if preferred)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon sesame oil
  • 1 teaspoon freshly grated ginger
  • 1 clove garlic, minced

Directions

  1. 1

Rinse the bamboo rice under cold water.

  2. 2

In a medium pot, bring 2 cups of water to a boil.

  3. 3

Add the bamboo rice, reduce heat to low, cover, and simmer for 20-25 minutes until rice is tender.

  4. 4

In a large bowl, combine cooked rice, carrots, cucumber, bell pepper, avocado, edamame, cilantro, and green onions.

  5. 5

In a separate bowl, whisk together soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic.

  7. 7

Sprinkle with peanuts and sesame seeds before serving.

  8. 8

Chef's tip

Bamboo rice can be substituted with jasmine or basmati for a different flavor profile. Adjust the vegetables based on seasonal availability.
