Ingredients
- 1 cup bamboo rice
- 1 1/2 cups water
- 1/2 cup sliced carrots
- 1/2 cup sliced cucumber
- 1/2 cup sliced bell pepper
- 1/2 cup sliced avocado
- 1/2 cup cooked edamame
- 1/4 cup chopped cilantro
- 1/4 cup chopped green onions
- 1/4 cup chopped peanuts
- 1/4 cup sesame seeds
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon grated ginger
- 1 clove garlic, minced
Instructions
- In a medium saucepan, combine the bamboo rice and water. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the rice is tender and the water is absorbed.
- In a large bowl, combine the cooked rice, carrots, cucumber, bell pepper, avocado, edamame, cilantro, green onions, and peanuts.
- In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic. Pour over the rice bowl and toss to combine.
- Sprinkle sesame seeds over the top of the bowl before serving.
