Ingredients

  • 1 cup bamboo rice
  • 1 1/2 cups water
  • 1/2 cup sliced carrots
  • 1/2 cup sliced cucumber
  • 1/2 cup sliced bell pepper
  • 1/2 cup sliced avocado
  • 1/2 cup cooked edamame
  • 1/4 cup chopped cilantro
  • 1/4 cup chopped green onions
  • 1/4 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated ginger
  • 1 clove garlic, minced

Instructions

  • In a medium saucepan, combine the bamboo rice and water. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes, or until the rice is tender and the water is absorbed.
  • In a large bowl, combine the cooked rice, carrots, cucumber, bell pepper, avocado, edamame, cilantro, green onions, and peanuts.
  • In a small bowl, whisk together the soy sauce, rice vinegar, honey, sesame oil, ginger, and garlic. Pour over the rice bowl and toss to combine.
  • Sprinkle sesame seeds over the top of the bowl before serving.
