Ingredients

  • 1 pre-made pie crust
  • 1 cup orange juice
  • 1/2 cup lemon juice
  • 1 cup crushed pineapple
  • 1 cup sugar
  • 1/4 cup cornstarch
  • 1/4 teaspoon salt
  • 3 egg yolks
  • 2 tablespoons butter
  • 1 cup whipped cream
  • 1/4 cup powdered sugar
  • 1 teaspoon vanilla extract

Instructions

  • Preheat the oven to 350°F (175°C).
  • Place the pre-made pie crust in a pie dish and set aside.
  • In a medium saucepan, combine the orange juice, lemon juice, crushed pineapple, sugar, cornstarch, and salt. Cook over medium heat, stirring constantly, until the mixture thickens.
  • In a small bowl, whisk the egg yolks. Gradually add a spoonful of the hot mixture to the egg yolks, whisking constantly. This will temper the eggs and prevent them from curdling.
  • Pour the tempered egg mixture back into the saucepan and continue cooking over medium heat, stirring constantly, until the mixture thickens further.
