Ingredients

  • 2 cups rolled oats
  • 1 cup cooked quinoa
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh basil
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 375°F.
  • In a large bowl, combine rolled oats, cooked quinoa, Parmesan cheese, parsley, basil, garlic, salt, and black pepper. Mix well.
  • Form mixture into 8 patties, about 1/2 inch thick.
  • In a large skillet, heat 1 tablespoon of olive oil over medium-high heat. Add oatmeal patties and cook until golden brown, about 3 minutes per side.
  • Spread 1/2 cup of marinara sauce in the bottom of a 9x13 inch baking dish. Arrange oatmeal patties on top of sauce. Spoon remaining marinara sauce over patties. Sprinkle with shredded mozzarella cheese.
  • Bake for 25-30 minutes, until cheese is melted and bubbly.
  • Let cool for 5 minutes before serving.
