Ingredients
- 1 cup oatmeal
- 2 cups pasta
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, grated
- 1 zucchini, sliced
- 1 can diced tomatoes
- 1 cup vegetable broth
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Salt and pepper to taste
- Grated Parmesan cheese for serving
Instructions
- Cook the oatmeal according to package instructions and set aside.
- Cook the pasta according to package instructions and set aside.
- In a large skillet, heat some oil over medium heat.
- Add the onion and garlic and cook until softened.
- Add the bell pepper, carrot, and zucchini and cook for another 5 minutes.
- Add the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
- Simmer for 10 minutes.
- Add the cooked oatmeal and pasta to the skillet and stir to combine.
- Cook for another 5 minutes, until heated through.
- Serve hot with grated Parmesan cheese on top.
