Ingredients

  • 1 cup oatmeal
  • 2 cups pasta
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 carrot, grated
  • 1 zucchini, sliced
  • 1 can diced tomatoes
  • 1 cup vegetable broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  • Cook the oatmeal according to package instructions and set aside.
  • Cook the pasta according to package instructions and set aside.
  • In a large skillet, heat some oil over medium heat.
  • Add the onion and garlic and cook until softened.
  • Add the bell pepper, carrot, and zucchini and cook for another 5 minutes.
  • Add the diced tomatoes, vegetable broth, oregano, basil, salt, and pepper.
  • Simmer for 10 minutes.
  • Add the cooked oatmeal and pasta to the skillet and stir to combine.
  • Cook for another 5 minutes, until heated through.
  • Serve hot with grated Parmesan cheese on top.
