  • 1/4 cup finely diced red onion
  • 1 tablespoon olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 8 small corn tortillas
  • Optional toppings: diced avocado, salsa, hot sauce
