Ingredients
- 1 cup cooked quinoa
- 1 can black beans, drained and rinsed
- 1/2 cup chopped walnuts
- 1/2 cup chopped almonds
- 1/4 cup chopped fresh cilantro
- 1/4 cup diced red onion
- 1 tablespoon olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 8-10 small corn tortillas
- Optional toppings: diced avocado, salsa, hot sauce
Instructions
- In a large bowl, combine the cooked quinoa, black beans, walnuts, almonds, cilantro, and red onion.
- In a small bowl, whisk together the olive oil, chili powder, cumin, smoked paprika, and salt. Pour the dressing over the quinoa mixture and stir to combine.
- Warm the tortillas in a dry skillet over medium heat, flipping once, until they are soft and pliable.
- Divide the quinoa mixture evenly among the tortillas. Top with diced avocado, salsa, and hot sauce, if desired.
