Ingredients

  • 1 cup cooked quinoa
  • 1 can black beans, drained and rinsed

  • 1/2 cup chopped almonds
  • 1/4 cup chopped fresh cilantro

  • 1 tablespoon olive oil

  • 8-10 small corn tortillas

Instructions

  • In a large bowl, combine the cooked quinoa, black beans, walnuts, almonds, cilantro, and red onion.
