Ingredients

  • 8 oz. fresh or dry noodles
  • 6 cups low-sodium chicken or vegetable broth
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 medium carrots, sliced
  • 2 celery stalks, sliced
  • 1 cup shiitake or button mushrooms, sliced
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon fresh ginger, grated
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 2 green onions, sliced for garnish

Directions

  1. 1

Cook noodles in a separate pot according to package instructions until al dente. Drain and set aside.

  2. 2

Heat olive oil in a large pot over medium heat. Add onion and garlic, sauté until translucent.

  3. 3

Add carrots, celery, and mushrooms. Sauté until vegetables are tender, about 5 minutes.

  4. 4

Pour in broth, soy sauce, sesame oil, and ginger. Bring to a gentle boil.

  5. 5

Reduce heat and let the soup simmer for 10 minutes.

  6. 6

Add the cooked noodles to the soup just before serving to prevent overcooking.

  7. 7

Season with salt and pepper to taste.

  8. 8

Serve hot, garnished with sliced green onions.

Chef's tip

For extra flavor, you may add a dash of hot sauce or a sprinkle of crushed red pepper while serving.
