- 8 oz. noodles
- 6 cups chicken or vegetable broth
- 1 onion, chopped
- 3 cloves garlic, minced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 1 cup mushrooms, sliced
- 1 tbsp. soy sauce
- 1 tsp. sesame oil
- 1 tsp. ginger, grated
- 1 tbsp. olive oil
- Salt and pepper to taste
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- In a large pot, heat olive oil over medium heat. Add onion and garlic and sauté until fragrant.
- Add carrots, celery, and mushrooms and cook until vegetables are tender.
- Add chicken or vegetable broth, soy sauce, sesame oil, and ginger. Bring to a boil.
- Reduce heat and simmer for 10-15 minutes.
- Add cooked noodles and stir to combine.
