- 8 oz. udon noodles
- 4 cups chicken broth
- 1 tbsp soy sauce
- 1 tbsp miso paste
- 1 tbsp grated ginger
- 2 cloves garlic, minced
- 1 cup sliced shiitake mushrooms
- 1 cup baby bok choy, chopped
- 1/2 cup sliced green onions
- 1/4 cup cilantro leaves
- 1 tbsp sesame oil
Instructions
- Cook the udon noodles according to package instructions.
- In a large pot, bring the chicken broth to a simmer.
- Add the soy sauce, miso paste, ginger, and garlic to the broth and stir to combine.
- Add the shiitake mushrooms and bok choy to the broth and simmer for 5-7 minutes, until the vegetables are tender.
