Ingredients

  • 8 oz. udon noodles
  • 4 cups chicken broth
  • 1 tbsp soy sauce
  • 1 tbsp miso paste
  • 1 tbsp grated ginger
  • 2 cloves garlic, minced
  • 1 cup sliced shiitake mushrooms
  • 1 cup baby bok choy, chopped
  • 1/2 cup sliced green onions
  • 1/4 cup cilantro leaves
  • 1 tbsp sesame oil

Instructions

  • Cook the udon noodles according to package instructions.
  • In a large pot, bring the chicken broth to a simmer.
  • Add the soy sauce, miso paste, ginger, and garlic to the broth and stir to combine.
