Ingredients

  • 2 cups graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 4 (8 oz) packages cream cheese, softened
  • 1 1/2 cups granulated sugar
  • 3/4 cup sour cream
  • 1 tsp vanilla extract
  • 4 large eggs

Instructions

  • Preheat the oven to 325°F (163°C).
  • In a medium bowl, combine the graham cracker crumbs and melted butter. Press the mixture into the bottom of a 9-inch springform pan to form the crust.
  • In a large mixing bowl, beat the cream cheese until smooth. Add the sugar, sour cream, and vanilla extract. Mix until well combined.
  • Add the eggs, one at a time, beating well after each addition.
  • Pour the cream cheese mixture over the crust in the springform pan.
  • Bake for 55-60 minutes, or until the center is set and the top is lightly browned.
  • Remove from the oven and let cool in the pan for 10 minutes. Then, run a knife around the edge of the pan to loosen the cheesecake.
  • Remove the sides of the springform pan and let the cheesecake cool completely.
  • Refrigerate for at least 4 hours, or overnight, before serving.
  • Serve chilled and enjoy!
