Ingredients
- 2 cups fresh nettle leaves
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tbsp ginger, grated
- 1 tsp cumin powder
- 1 tsp coriander powder
- 1 tsp turmeric powder
- 1 tsp garam masala
- 1 can diced tomatoes
- 1 can coconut milk
- 1 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- Wash the nettle leaves and remove any tough stems.
- Heat the oil in a large pan over medium heat.
- Add the onion, garlic, and ginger and sauté until the onion is translucent.
- Add the cumin, coriander, turmeric, and garam masala and cook for 1-2 minutes, stirring constantly.
- Add the nettle leaves and cook until they are wilted, about 5 minutes.
- Add the diced tomatoes and coconut milk and bring to a simmer.
- Simmer for 15-20 minutes, stirring occasionally.
- Season with salt and pepper to taste.
- Serve hot with rice or naan bread.
