Ingredients

  • 2 cups fresh nettle leaves
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 tsp turmeric powder
  • 1 tsp garam masala
  • 1 can diced tomatoes
  • 1 can coconut milk
  • 1 tbsp vegetable oil
  • Salt and pepper to taste

Instructions

  • Wash the nettle leaves and remove any tough stems.
  • Heat the oil in a large pan over medium heat.
  • Add the onion, garlic, and ginger and sauté until the onion is translucent.
  • Add the cumin, coriander, turmeric, and garam masala and cook for 1-2 minutes, stirring constantly.
  • Add the nettle leaves and cook until they are wilted, about 5 minutes.
  • Add the diced tomatoes and coconut milk and bring to a simmer.
  • Simmer for 15-20 minutes, stirring occasionally.
  • Season with salt and pepper to taste.
  • Serve hot with rice or naan bread.
