Ingredients

  • 3 cups cooked jasmine rice
  • 1/2 cup diced chicken breast
  • 1/2 cup diced shrimp
  • 1/2 cup diced ham
  • 1/2 cup diced onion
  • 1/2 cup diced carrot
  • 1/2 cup sliced green onions
  • 2 cloves garlic, minced
  • 2 tbsp vegetable oil
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp kecap manis
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 2 eggs, beaten
  • Optional garnishes: sliced cucumber, tomato wedges, fried shallots

Directions

  1. 1

Heat the oil in a large wok over medium-high heat until shimmering.

  2. 2

Add garlic and onion, and stir-fry for 1-2 minutes until aromatic.

  3. 3

Introduce chicken, shrimp, and ham, continuing to stir-fry for 3-4 minutes until cooked through.

  4. 4

Mix in carrot and green onions, stir-frying for an additional 2 minutes.

  5. 5

Push the ingredients to one side and pour beaten eggs into the empty space, scrambling until cooked then combining with other ingredients.

  6. 6

Add rice, stirring to break any clumps, and fry for 2-3 minutes.

  7. 7

Drizzle with soy sauce, oyster sauce, and kecap manis; season with sugar, salt, and white pepper, stirring well for another 2 minutes.

  8. 8

Serve immediately, garnished with cucumber, tomato wedges, and fried shallots if desired.

Chef's tip

For best results, use day-old rice as it fries better than freshly cooked rice.
