Ingredients
- 1 lb. mushrooms, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tbsp. olive oil
- 1 cup quinoa
- 2 cups vegetable broth
- 1/4 cup chopped parsley
- Salt and pepper to taste
Instructions
- In a large skillet, heat the olive oil over medium heat.
- Add the onion and garlic and sauté until softened, about 5 minutes.
- Add the mushrooms and continue to sauté until they release their liquid and begin to brown, about 10 minutes.
- Add the quinoa and vegetable broth and bring to a boil.
- Reduce heat to low, cover, and simmer until the quinoa is tender and the liquid is absorbed, about 20 minutes.
- Stir in the parsley and season with salt and pepper to taste.
- Serve hot and enjoy!
