Ingredients

  • 1 lb. mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tbsp. olive oil
  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Instructions

  • In a large skillet, heat the olive oil over medium heat.
  • Add the onion and garlic and sauté until softened, about 5 minutes.
  • Add the mushrooms and continue to sauté until they release their liquid and begin to brown, about 10 minutes.
  • Add the quinoa and vegetable broth and bring to a boil.
  • Reduce heat to low, cover, and simmer until the quinoa is tender and the liquid is absorbed, about 20 minutes.
  • Stir in the parsley and season with salt and pepper to taste.
