Ingredients

  • 1 pound mushrooms, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  • In a large pot, melt the butter over medium heat.
  • Add the onions and garlic and cook until softened.
  • Add the mushrooms and cook until they release their liquid and start to brown.
  • Pour in the vegetable broth and bring to a boil.
  • Reduce heat and simmer for 20 minutes.
  • Using an immersion blender, puree the soup until smooth.
