Ingredients
- 2 portobello mushrooms
- 4 slices of bread
- 1 tablespoon olive oil
- 1 clove of garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup spinach leaves
- 4 slices of cheese
- 1/4 cup mayonnaise
- 1/4 cup sliced tomatoes
- 1/4 cup sliced red onions
Instructions
- 1. Preheat the oven to 400°F (200°C).
- 2. Remove the stems from the portobello mushrooms and slice them.
- 3. Heat the olive oil in a pan over medium heat. Add the minced garlic and sliced mushrooms. Cook for 5 minutes, or until the mushrooms are tender.
- 4. Season the mushrooms with salt and black pepper.
- 5. Toast the bread slices in a toaster or oven until golden brown.
- 6. Spread mayonnaise on one side of each bread slice.
- 7. Place a slice of cheese on top of the mayonnaise on two bread slices.
- 8. Divide the cooked mushrooms evenly between the two bread slices with cheese.
- 9. Top the mushrooms with spinach leaves, sliced tomatoes, and sliced red onions.
- 10. Place the remaining two bread slices on top to form sandwiches.
- 11. Cut the sandwiches in half and serve.
