Ingredients

  • 2 portobello mushrooms
  • 4 slices of bread
  • 1 tablespoon olive oil
  • 1 clove of garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup spinach leaves
  • 4 slices of cheese
  • 1/4 cup mayonnaise
  • 1/4 cup sliced tomatoes
  • 1/4 cup sliced red onions

Instructions

  • 1. Preheat the oven to 400°F (200°C).
  • 2. Remove the stems from the portobello mushrooms and slice them.
  • 3. Heat the olive oil in a pan over medium heat. Add the minced garlic and sliced mushrooms. Cook for 5 minutes, or until the mushrooms are tender.
  • 4. Season the mushrooms with salt and black pepper.
  • 5. Toast the bread slices in a toaster or oven until golden brown.
  • 6. Spread mayonnaise on one side of each bread slice.
  • 7. Place a slice of cheese on top of the mayonnaise on two bread slices.
  • 8. Divide the cooked mushrooms evenly between the two bread slices with cheese.
  • 9. Top the mushrooms with spinach leaves, sliced tomatoes, and sliced red onions.
  • 10. Place the remaining two bread slices on top to form sandwiches.
  • 11. Cut the sandwiches in half and serve.
