Ingredients

  • 8 oz whole-grain pasta
  • 1 cup cremini mushrooms, sliced
  • 1 cup fresh or frozen corn kernels
  • 2 cloves garlic, minced
  • 1/2 cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1/4 cup reserved pasta water
  • Salt and pepper to taste
  • 1 tbsp fresh lemon juice
  • 2 tbsp chopped fresh parsley

Directions

    Cook the pasta in salted boiling water until al dente. Reserve 1/4 cup of the cooking water, then drain the pasta.
