Ingredients
- 1 large eggplant
- 1 cup mozzarella cheese, shredded
- 1/4 cup grated Parmesan cheese
- 1/4 cup breadcrumbs
- 1/4 cup fresh basil, chopped
- 2 cloves garlic, minced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the eggplant into 1/2-inch thick rounds.
- In a small bowl, combine the breadcrumbs, Parmesan cheese, basil, garlic, salt, and black pepper.
- Brush each eggplant slice with olive oil on both sides.
- Dip each slice into the breadcrumb mixture, pressing gently to adhere.
- Place the coated eggplant slices on a baking sheet.
- Bake for 15-20 minutes, or until the eggplant is tender and the breadcrumbs are golden brown.
- Remove from the oven and sprinkle the shredded mozzarella cheese over the top of each slice.
- Return to the oven and bake for an additional 5 minutes, or until the cheese is melted and bubbly.
