  • 1 large eggplant
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup breadcrumbs
  • 1/4 cup fresh basil, chopped
  • 2 cloves garlic, minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons olive oil

Instructions

  • Preheat the oven to 375°F (190°C).
  • Slice the eggplant into 1/2-inch thick rounds.
  • In a small bowl, combine the breadcrumbs, Parmesan cheese, basil, garlic, salt, and black pepper.
  • Brush each eggplant slice with olive oil on both sides.
  • Dip each slice into the breadcrumb mixture, pressing gently to adhere.
