- 2 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 red bell pepper, diced
- 1 cup sliced mushrooms
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheddar cheese
- 1/4 cup chopped fresh cilantro
- 8 small flour tortillas
- 1 cup sour cream
- 1 cup salsa
- 1 avocado, sliced
Instructions
- Preheat the oven to 375°F (190°C).
- In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, bell pepper, and mushrooms. Cook until the vegetables are softened, about 5 minutes.
- Add the chicken breasts to the skillet and sprinkle with cumin, paprika, oregano, salt, and black pepper. Cook until the chicken is cooked through, about 10 minutes. Remove from heat and let cool slightly.
- Using two forks, shred the chicken into small pieces. Return the shredded chicken to the skillet and mix with the cooked vegetables.
- Place a small amount of the chicken and vegetable mixture onto each tortilla. Top with shredded cheddar cheese and cilantro. Roll up the tortillas and place them seam-side down in a baking dish.
- Bake in the preheated oven for 15 minutes, or until the cheese is melted and the tortillas are golden brown.
