Ingredients

  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup sliced mushrooms
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 8 small flour tortillas
  • 1 cup sour cream
  • 1 cup salsa
  • 1 avocado, sliced

Directions

    Preheat the oven to 375°F (190°C).

    Heat olive oil in a large skillet over medium heat. Add onion, garlic, bell pepper, and mushrooms. Sauté until softened, about 5 minutes.

    Season chicken breasts with cumin, paprika, oregano, salt, and pepper. Add to skillet and cook until no longer pink, about 8-10 minutes.

    Remove chicken from skillet and shred with two forks. Return to skillet and mix with vegetables.
