Ingredients
- 1 lb. fresh salmon
- 1 tbsp. chili powder
- 1 tsp. cumin
- 1 tsp. garlic powder
- 1/2 tsp. paprika
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1 tbsp. olive oil
- 8-10 small corn tortillas
- 1/2 cup diced tomatoes
- 1/2 cup diced red onion
- 1/4 cup chopped fresh cilantro
- 1 lime, cut into wedges
Instructions
- Preheat oven to 400°F.
- In a small bowl, mix together chili powder, cumin, garlic powder, paprika, salt, and black pepper.
- Rub spice mixture all over salmon fillet.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Add salmon fillet to skillet and cook for 2-3 minutes on each side, until browned.
- Transfer skillet to oven and bake for 10-12 minutes, until salmon is cooked through.
- Remove salmon from oven and let cool for a few minutes.
- Using a fork, flake salmon into small pieces.
- To assemble tacos, warm tortillas in a dry skillet over medium heat.
- Divide salmon evenly among tortillas.
- Top with diced tomatoes, red onion, and cilantro.
- Squeeze lime wedges over tacos and serve immediately.
