Ingredients

  • 1 lb. fresh salmon
  • 1 tbsp. chili powder
  • 1 tsp. cumin
  • 1 tsp. garlic powder
  • 1/2 tsp. paprika
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 tbsp. olive oil
  • 8-10 small corn tortillas
  • 1/2 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges

Instructions

  • Preheat oven to 400°F.
  • In a small bowl, mix together chili powder, cumin, garlic powder, paprika, salt, and black pepper.
  • Rub spice mixture all over salmon fillet.
  • Heat olive oil in a large oven-safe skillet over medium-high heat.
  • Add salmon fillet to skillet and cook for 2-3 minutes on each side, until browned.
  • Transfer skillet to oven and bake for 10-12 minutes, until salmon is cooked through.
  • Remove salmon from oven and let cool for a few minutes.
  • Using a fork, flake salmon into small pieces.
  • To assemble tacos, warm tortillas in a dry skillet over medium heat.
  • Divide salmon evenly among tortillas.
  • Top with diced tomatoes, red onion, and cilantro.
  • Squeeze lime wedges over tacos and serve immediately.
