Ingredients
- 1 cup lentils
- 1 onion, diced
- 2 cloves garlic, minced
- 1 jalapeno, seeded and diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 teaspoon paprika
- 1 can diced tomatoes
- 2 cups vegetable broth
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- 1. Rinse the lentils under cold water and set aside.
- 2. In a large pot, heat the olive oil over medium heat. Add the onion, garlic, and jalapeno, and sauté until softened.
- 3. Add the cumin, chili powder, and paprika to the pot, and stir to coat the vegetables in the spices.
- 4. Add the lentils, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce the heat and simmer for 20-25 minutes, or until the lentils are tender.
